Ingredients
- 3 cups cooked brown lentils
- 2 large eggs
- 1/2 tsp garlic powder
- 2 tbsp Italian seasoning
- 1/2 medium onion, chopped
- 1 1/2 cups whole wheat breadcrumbs
- 3 cups marinara sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Directions
- In a food processor, add lentils, eggs, garlic powder, Italian seasoning, onion, breadcrumbs, salt and pepper.
- Blend ingredients together until the mixture looks smooth.
- Scoop 2 tablespoons of mix and roll into a ball. Repeat until 36 lentil balls are made.
- In a large skillet, heat oil over medium-low heat.
- Add all lentil balls into the skillet and cook for 10 minutes on each side.
- Pour 3 cups of marinara in the skillet and cover. Allow to cook for 5 minutes.
