Ingredients

  • 3/4 cup enriched all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp sugar
  • 1 large egg
  • 1/2 cup milk

Directions

  1. In a medium bowl, mix dry ingredients together.
  2. Add egg and scramble in bowl. Then slowly pour milk as you stir. Mix until all lumps have disappeared.
  3. On low to medium heat, place 2 tablespoons of batter on a non-stick skillet. Allow batter to cook until you see many bubbles forming on top and bottom is golden brown. Flip and cook for 30 seconds to a minute. Repeat 8 more times. You can do a few at a time!
  4. Pairs well with fresh fruit, such as blueberries!

One crumpet provides 1/2 oz eq grains.
